The Camu Camu that is described as pink in color called Atomized Camu Camu, and it is much like how instant coffee is produced from the coffee bean. During this process, the level of vitamin C does drop, but the benefit is a Camu Camu that is more water-soluble.
This process uses maltodextrin. So if you are mixing drinks, then perhaps the pink, atomized processed Camu Camu is right for you. If you are concerned about maltodextrin (highly processed in nature, perhaps derived from non-GMO corn, far from natural), then further research is advised. Some atomized Camu Camu has at least 10% maltodextrin, which might be a little concerning.
Why is maltodextrin in your food? Maltodextrin is generally used as a thickener or filler to increase the volume of processed food. It’s also a preservative that increases the shelf life of packaged foods.
